This zucchini noodle, or “zoodle,” salad is a really fun take on classic salads with spinach or lettuce leaves. I had forgotten how good zucchini can be when eaten raw, and I especially enjoy it in noodle form. Add a few more veggies and some dressing and you’ve got a really colorful, interesting salad!

How to Make It
- In a large bowl, combine the zucchini noodles, tomato, onion, and avocado.
- In a small bowl, whisk together the olive oil, vinegar, garlic, mustard, and some salt and pepper. Drizzle over the salad and toss to combine. Divide into serving bowls and top with the blue cheese crumbles.
