Sure, avos may be exy right now. But so worth it! To add more veg, serve over a bed of wilted baby spinach.
Ingredients
- 500 g hake fillets (or try using any other firm white fish)
- 1 Lime juice
- 1 tbs extra virgin olive oil
- Pinch sea salt
- Freshly ground black pepper
For the Salsa
- 1 avocado
How to Make It
- First, preheat your oven to 200°C.
- Place fish in a roasting pan, drizzle over lime juice and olive oil, then season. Cover with foil and bake for 10–15 mins, depending on thickness of the fish.
- Meanwhile, to make the salsa, dice the avocado and place in a small bowl. Stir in the onion, chilli, coriander and lime zest. Drizzle in the lime juice and olive oil, then season to taste.
- Serve the fish with the salsa and extra lime halves for squeesing over.
