Ingredients
- ¼ cup olive oil plus 2 Tbsp
- 2 lbs mixed mushrooms
- 5 cups cooked hulled barley
- 2 tsp chopped fresh sage
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- Kosher salt
- Freshly ground pepper
How to Make It
- In a large skillet, heat 2 tablespoons olive oil. Add ¾ pound of mixed mushrooms and cook over high heat, stirring, until golden, about 5 minutes. Transfer to a bowl. Repeat twice to cook all of the mushrooms, adding more oil as necessary.
- Stir in cooked barley, sage, lemon juice and ¼ cup olive oil; season with salt and pepper. Serve warm or at room temperature.
