This quick and easy salad is a perfect summer meal. Light and nutritious, it makes for an excellent lunch especially on days when you are over burdened with work.

How to Make It
- Chop the Green Beans into 1.5 -2 inch pieces (make it easy to eat).
- Cut the red onion into quarters.
- In a pan lightly toast the walnuts, without any oil.
- Take a large pot of hot salted water, and throw in the green beans. Let them blanch in the pot for 5-8 minutes. The beans should still have their crunch so avoid blanching them for too long.
- Remove the green beans and put them in cold water or a bowl of ice cubes to prevent them from cooking further.
- Mix the salt, pepper, balsamic vinegar and olive oil in a bowl. This is your dressing for the salad.
- Mix the green beans, onion and walnuts in a bowl. Pour the dressing over and toss the salad well.
