These high-protein patties make a wonderful change from regular sausages at breakfast time they are also great for dinner served with new potatoes.

How to Make It
Thoroughly combine the turkey with the salt, pepper, thyme, sage, allspice, garlic, oatmeal and egg in a bowl. (The mixture can be stored, covered, in the refrigerator for up to 12 hours.)
Shape the mixture into eight small patties. Heat 2 teaspoons of the oil in a non-stick frying pan, add the patties and fry over a medium heat for about 4 minutes on each side, or until golden and cooked all the way through with no pink inside. Transfer to a plate and keep warm.
Add the mushrooms to the pan and stir for 1 minute, until soft. Pour in the remaining oil, then add the tomatoes and cook, without stirring, for a further 1–2 minutes to warm through. Serve the patties with the mushrooms and tomatoes.
