When I bring a bowl of this salad to a pot-luck affair it’s so popular there are never any leftovers and everyone asks for the recipe.
Ingredients
- 9 oz package fresh cheese tortellini, uncooked
- 3 ears fresh corn, cooked 3 minutes, cut from the cob
- 1 clove garlic
- 2 cups grape tomatoes, sliced in half
- ¼ cup green onion, chopped
- ¼ cup fresh basil, chopped
- 1 tsp olive oil
- 0.12 tsp pepper
- 2 tbsp Parmesan cheese
How to Make It
- Cook tortellini in boiling water 3 min. Add corn, cook 2-3 more minutes, drain well
- Rub the inside of a large serving bowl with garlic, discard garlic. Add tortellini, corn, tomatoes, and remaining ingredients. Toss gently to coat.
