These hot and fiery hamburgers are a true taste of the southwest.
Ingredients
- Salt and black pepper
- 1 pound grass-fed ground beef
- 1 pound grass-fed ground beef
- 1 yellow onion (peeled, sliced thinly)
- 1 tsp sugar
- 1 tbsp mayonnaise
- Squeeze fresh lime juice
- 1 tbsp chiles in adobo sauce
- 4 burger buns (toasted)
- 4 ounces sliced Monterey Jack
How to Make It
- Preheat your grill to moderately high heat and oil well.
- Season the beef with salt and black pepper then form into 4 equal patties.
- Warm 1 tsp canola oil in a skillet over moderately low heat, add the onions to the skillet and sprinkle with sugar. Toss to combine and sauté for just over 10 minutes until caramelized. Take off the heat and set to one side.
- Next, combine the mayonnaise, lime juice, and chiles in adobo in a small bowl. Chill until ready to serve.
- Place the patties on the hot grill, close the lid, and cook for 5 minutes on each side.
- Place the burgers inside the buns and top with a slice of Monterey Jack and a spoonful of spicy mayo and caramelized onions. Serve straight away.
