Using ground meat is an easy way to introduce young children to Asian flavors—just leave out the chiles.
Ingredients
- salt
- 3½ oz (100 g) broccoli florets, cut very small
- 2 tbsp sunflower or vegetable oil
- bunch of scallions, finely chopped
- 2 garlic cloves, crushed
- 1 in (3 cm) fresh ginger, finely chopped
- 1 tbsp finely chopped cilantro stalks, plus a handful of cilantro leaves, roughly chopped
- 1 red chile, seeded and finely chopped (optional)
- 14 oz (40 g) ground beef
- 1 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp granulated sugar
- rice, to serve
For a Gluten-free option
- use gluten-free tamari to replace soy sauce
How to Make It
- Bring a large pan of salted water to a boil and blanch the broccoli for 1 minute, then drain and refresh it under cold water. Set aside.
- Heat the sunflower oil in a wok or a large, deep-sided frying pan. Add the scallions, garlic, ginger, cilantro stalks, and chile (if using), and cook for a couple of minutes until colored slightly.
- Add the ground beef and continue to cook over high heat until the meat is well browned.
- Return the broccoli and add the fish sauce, soy sauce, lime juice, and sugar. Mix well, cooking for a minute or 2 until the broccoli is piping hot. Stir in the cilantro leaves and serve with rice.
