Ingredients
- 1 tablespoon canola oil
- 1 pound boneless, skinless chicken breasts, cut into ½-inch strips
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ½ teaspoon ground ginger
- 1 yellow or orange bell pepper, seeded, deribbed, and chopped
- 2 green onions, including green parts, chopped
- 1½ cups pitted dark cherries or frozen unsweetened sweet cherries
- ¾ cup Diva-Style Sweet and Sour Sauce
How to Make It
- Heat the oil in a large nonstick skillet over medium heat until shimmering. Season the chicken with the garlic powder, salt, and ginger and add the chicken to the pan. Stir for 4 to 5 minutes, or until the chicken is no longer pink. Add the bell pepper and green onions to the pan.
- Turn the heat to low and simmer for 4 to 5 minutes, or until the pepper is crisp-tender. Stir in the cherries and the sweet and sour sauce. Cook and stir until the sauce is thoroughly heated, 3 to 5 minutes. Diva-Style Sweet and Sour Sauce
- Many bottled sweet and sour sauces contain too much sugar. My version is delicious but uses ingredients that keep blood glucose levels in balance. This sauce can be used in Asian recipes and as a dipping sauce.
Ingredients:
- 4 teaspoons cornstarch
- 4 teaspoons water
- ⅓ cup rice vinegar
- 3 tablespoons agave syrup
- 1 tablespoon low-sugar ketchup
- 2 teaspoons reduced-sodium soy sauce
- In a small bowl, mix together the cornstarch and water. In a small saucepan, combine the vinegar, agave syrup, ketchup, and soy sauce and bring to a boil over high heat.
- Add the cornstarch mixture and stir to thicken. Store in an airtight container in the refrigerator for up to 10 days.
