These traditional Japanese steamed “cookies” are so divine. These are known as Japanese Yogurt Mushi-pans. They wind up being little cushions of delight that are subtly sweet. The raisins are a great added bonus.
Ingredients
- 2½ tablespoons granulated sugar
- 1 cup self-rising flour
- 2 tablespoons vegetable oil
- ½ cup Greek yogurt
- ¼ cup raisins
- 1½ cups warm water
How to Make It
- In a bowl, whisk together sugar and flour. Add in oil and yogurt. Mix well with a fork. Gently fold in raisins.
- Add about a tablespoon of dough to each piece of parchment paper.
- Add 1½ cups of warm water to your pot. Insert trivet.
- Place 4 raisin “cookies” in your authentic Instant Pot silicone steamer basket. Place basket on trivet. Lock lid and close vent. Cook on High Manual Pressure for 10 minutes and allow to NPR for 10. QPR any remaining pressure.
- Remove steamer basket and allow “cookies” to cool.
