With strawberries practically in our genes, the Hafner family can never get enough of these sweet ruby jewels. I love the idea of introducing strawberries into a savory salad, especially when you add creamy cheese and crunchy walnuts to this colorful mix.
Ingredients
Salad
- 8 cups baby spinach leaves, washed and dried (or mixture of spinach and torn romaine leaves)
- ¼ cup Vidalia onion, thinly sliced
- 2 cups strawberries, washed and sliced
- 1 cup fresh mozzarella, cubed
Dressing
How to Make It
- In a small bowl, whisk together dressing ingredients. (Dressing will keep covered in refrigerator for two days.)
- In a salad bowl, combine the spinach, onion, strawberries, and mozzarella. Drizzle with dressing and toss gently.
- Sprinkle with nuts and serve immediately.
