- 4 bone-in, skin-on chicken thighs
- 2 green bell peppers, thinly sliced
- ½ cup thinly sliced onions
- ½ cup chicken bone broth, store-bought or homemade
- 2 tablespoons Taco Seasoning

How to Make It
- Place the ingredients for the chicken in a 4-quart slow cooker. Cover and cook on low for 6 hours, or until the chicken is falling off the bone.
- Shred the chicken meat with two forks; discard the bones. Place the mixture in a serving dish and serve hot with large lettuce leaves or Zucchini Tortillas. Sprinkle the chopped cilantro over the top, and serve the salsa and dressing on the side.
