This barbecued chicken is so good that, in addition to enjoying it in wraps, we sometimes eat a plateful as is!
Ingredients
BBQ Chicken Salad
- ½ onion, sliced into thick rings
- 2 pounds boneless, skinless chicken thighs
- Fine sea salt
- 1 cup tomato sauce
- ¼ cup chicken bone broth, store-bought or homemade
- ¼ cup Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
- 1 teaspoon liquid smoke
Wraps
- 12 large Boston lettuce leaves or 6 Zucchini Tortillas
- 12 green onions, for tying wraps (optional)
For serving
- BBQ Sauce (optional)
How to Make It
- Lay the onions in a 4-quart slow cooker. Season the chicken with salt (about ⅛ teaspoon per thigh) and place on top of the onions. Pour in the tomato sauce, broth, sweetener, and liquid smoke. Cover and cook on high for 3 to 4 hours.
- Remove the chicken from the slow cooker and transfer to a cutting board. Shred the chicken using two forks. Dice the cooked onion and stir into the shredded chicken. Return the shredded chicken and onion to the slow cooker and turn in the sauce to allow it soak up the tasty sauce.
- Serve in Boston lettuce leaves or Zucchini Tortillas. Tie each wrap closed with a decorative piece of green onion, if desired. Serve with barbecue sauce, if desired.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
