Ingredients
- 2 cucumbers
- 2 tsp salt
- 8 cloves garlic
- 3 red chilli peppers
- 3 red chilli peppers
- 4 tbsp soy sauce
- 1 tsp ground Sichuan pepper
- 2 tbsp coriander leaves
How to Make It
- Use the flat of a large kitchen knife to smash the cucumbers. You will feel much better afterwards.
- Coarsely chop up the cucumbers and mix with the salt. Leave to stand for 10 minutes.
- Drain off the excess liquid and wash the cucumber pieces under running water.
- Finely chop the garlic and chillies. Put the peanut oil in a hot frying pan and sweat the garlic and chillies over a medium heat for 2–3 minutes.
- Deglaze the pan with the soy sauce and add the Sichuan pepper.
- Pour the hot dressing over the cucumber pieces, leave to cool a little and sprinkle coriander leaves over the top.
