Ingredients
- 1 tbsp olive oil
- 1 small red onion, minced
- 1 clove garlic, minced
- 4 salmon filets (each 4 oz/120 g), skin on
- 1 avocado, diced
- 1 small pink grapefruit, diced
- 15 strawberries, diced
- Pinch crushed hot pepper flakes
- ½ lemon juice
How to Make It
- In a skillet, heat oil over high heat and sauté onion and garlic for 3 minutes. Reduce heat to medium and cook salmon for 8 to 10 minutes, depending on thickness.
- Meanwhile, in a bowl, combine avocado, grapefruit, strawberries and hot pepper flakes. Drizzle with lemon juice and mix well.
- Top salmon with salsa.
- Serve with rice or quinoa.
