This recipe works well with fish that have a slightly earthy taste, such as rockfish. Soaking the rockfish in a little acidulated water before cooking improves its flavor.
Ingredients
- 4 rockfish or gray mullet fillets, about 6 oz (175 g) each, peeled
- 1 tbsp olive oil
- 1 tbsp chopped flat-leaf parsley
- ½ lemon juice
- salt and freshly ground black pepper
- a few springs of sage, to garnish
- lemon wedge, to garnish
For the crust
- 8 tbsp fresh bread crumbs
- 1 tbsp melted butter
- 1 tbsp chopped sage
- 1 tbsp snipped chives
- ½ grated lemon zest
How to Make It
- Preheat the oven to 400ºF (200ºC). Arrange the fish on a baking sheet. Mix the oil, parsley, and lemon juice, and season with salt and plenty of pepper.
- To make the crust, mix together the bread crumbs, melted butter, sage, chives, and lemon zest. Season lightly and sprinkle over the fish, pressing to stick to the butter.
- Roast in the oven for 12–15 minutes, or until the fish is cooked—it will be firm, white, and opaque.
- Transfer to a warmed serving dish, garnish with the sage and lemon wedges, and serve with green beans.
