Ingredients
- 1 pound carrots, peeled, quartered lengthwise, and cut into approximately 2-inch lengths
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon salt
- 2 tablespoons hard cider syrup
- 1 tablespoon chopped fresh chives or scallions
How to Make It
- Preheat the oven to 500°F (260°C).
- Line a baking sheet with parchment paper. Place the carrots on the baking sheet. Drizzle with the olive oil and salt and toss to combine. Spread out in a single layer. Roast in the oven for 15 minutes, or until the carrots start to fleck with dark brown caramelized spots.
- Arrange the carrots on a serving plate. Drizzle the syrup over them, then sprinkle with the chives.
