Ingredients
- 1 large onion, peeled and quartered
- 4 zucchini, cut once lengthwise
- 2 portobello mushroom caps, stemmed and halved
- 2 tablespoons solid cooking fat, melted
- 1 tablespoon fresh rosemary, minced
- Sea salt to taste
How to Make It
- Preheat your oven to 400 degrees.
- Place the onion, zucchini slices, and portobellos in a bowl and coat evenly with the cooking fat, rosemary and salt.
- Place on a baking sheet and cook in the oven for 30 minutes or until vegetables are tender and the outsides are caramelized. Serve warm.
