Ingredients
For the thousand Island dressing
- ¾ cup Copycat Baconnaise or mayonnaise
- ¼ cup chopped dill pickles
- ¼ cup tomato sauce, homemade or store-bought
- 2 tablespoons powdered erythritol or 1 drop stevia glycerite
- 0.12 teaspoon fine sea salt
- 0.12 teaspoon fish sauce
- 1 pound corned beef
- 2 tablespoons bacon fat
- 1 loaf Keto Bread, cut into 12 slices
- 2 cups fermented sauerkraut
How to Make It
- Make the dressing by combining all of the ingredients in a jar.
- Slice the corned beef against the grain into ¼-inch-thick slices. Set aside.
- Heat the bacon fat in a large skillet over medium heat. Fry the bread slices until golden brown.
- Assemble the sandwiches by layering corned beef, sauerkraut, and a smear of Thousand Island dressing between two slices of fried bread.
