Ingredients
- ½ cup (120 ml) coconut oil
- 3 tablespoons cacao butter
- ⅓ cup / 75 ml raw honey
- ¾ cup / 90 g raw cacao powder
- 3 tablespoons lucuma powder
- 1 tablespoon maca powder
- ¼ teaspoon fine sea salt
- ¼ cup / 20 g goji berries
- ¼ cup / 30 g cacao nibs
- 1 tablespoon bee pollen
- 2 tablespoons hemp seeds
How to Make It
- In a double boiler (or in a heatproof glass bowl set over a pot of simmering water), melt the coconut oil and cacao butter together. Add the honey and whisk to combine. When the mixture is completely uniform, remove it from the heat and sift in the cacao powder, lucuma, maca, and sea salt. Taste for sweetness and saltiness, and adjust accordingly.
- On a baking sheet lined with parchment paper, scatter half of the goji, cacao nibs, bee pollen, and hemp seeds. Wait until the liquid chocolate has cooled just slightly, so that it is a little thicker. Then pour the chocolate over the top, covering the superfoods in an even layer. Sprinkle the remaining half of the superfoods over the chocolate. Put the baking sheet in the fridge or freezer, and chill until the chocolate bar has firmed up completely, at least 1 hour in the fridge or 30 minutes in the freezer.
- Break the cold chocolate bar into shards, or cut it into individual bars. Any leftovers can be wrapped in a plastic bag and stored in the freezer for 2 months.
