Ingredients
- ½ cup (125 ml) water
- ¼ cup (60 ml) quinoa, rinsed and drained
- 2 cups (500 ml) chopped kale, stems removed
- 1 cup (250 ml) strawberries, quartered
- ¼ cup (60 ml) walnuts, roasted
- ¼ cup (60 ml) goat cheese, in pieces
- 3 tbsp chopped fresh mint
For the vinaigrette
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp maple syrup
- 1 clove garlic, minced
- Seasoning to taste
How to Make It
- In a large saucepan over medium heat, bring water to a boil and add quinoa. Reduce heat to low. Cover and let simmer for 12 minutes. Drain and let cool.
- In a salad bowl, mix all ingredients for salad.
- In a smaller bowl, whisk together ingredients for vinaigrette.
- Drizzle vinaigrette on salad before serving and toss to coat.
