Ingredients
For the Dough
- 1 egg
- Whole grain flour, 1 cup (8 oz)
- Olive oil, 1 oz
- Honey (liquid), 2 tbsp
For the Stuffing
- 1 egg
- 1 medium orange
- Pumpkin, 1 lb
- Honey (liquid), 2 tbsp
- Brown sugar, 2 tbsp
- Coconut oil, 1 tbsp
- Whole grain flour, 2 tbsp
How to Make It
- Grate the orange peel; keep 2 tsp. of orange peel. Prepare the Dough
- Mix egg and honey well in a bowl. Add oil, 1 tsp. of orange peel, and mix all together using spoon or whisk. Add flour and mix the dough with hands.
- Form the dough into a ball and place it in a bag in a freezer for 5–10 minutes. It will make the dough easier to work with.
- Prepare the filling. You can do it two ways—with a blender or manually.
- Way 1. Clean and cut pumpkin into cubes; place it in a blender cup. Squeeze juice from 1 orange and add 2 tbsp. of the juice it to the pumpkin. Add the rest of ingredients for the filling in a blender cup and mix them all together. Way 2. Clean and grate pumpkin. Squeeze juice from 1 orange and add 2 tbsp. of the orange juice it to the pumpkin. Mix the rest of ingredients for the filling in a bowl. Add grated orange peel and mix all together using spoon.
- Put the oven on preheat to 380°F. Now let’s Prepare the Base
- Take the dough out. Roll it using rolling pin or bottle. Cut the circle from the dough. You can use a lid of the proper size to achieve a perfect circle shape. Place the dough on a wax paper and put it on a round tray.
- Place your pumpkin filling in the pie. Sprinkle with 1 tsp. of orange peel. You can use the rest of the dough to decorate your pie—just cut the dough and cut the shapes with a cookie cutter.
- Place the pie in the oven and bake for 40 minutes (380°F). When the pie is ready, you will see the filling turn a golden color.
