How to Make It
- Place the arugula in a medium-sized bowl and toss it with the dressing.
- Lay a slice of prosciutto on a clean work surface with the narrow end facing you. Place a small handful of the dressed arugula along the edge of the prosciutto closest to you, then top with ½ tablespoon each of the chopped eggs and tomato. Roll up and place seam side down on a serving platter. Repeat with the remaining ingredients.
- Store in an airtight container in the refrigerator for up to 4 days. Do not freeze.
