Ingredients
- 2 plates of pork ribs 700 g each
- 1.5 cups of blackberries
- ¼ Cup honey
- ¼ Cup tomato sauce
- ¼ Cup brown sugar
- 3 cm ginger root
- 1 clove of garlic
- 1 tsp freshly ground black pepper
- ½ tsp chili pepper flakes
- salt
How to Make It
- For the marinade put the blackberries in a blender, add the peeled ginger and garlic and chop. Then add the brown sugar, honey, tomato sauce and spices and beat well. Pour the mixture into the pan and simmer, stirring occasionally, for 10-12 mins, until the marinade thickens.
- Heat a griddle pan and fry the ribs for 5 minutes on each side.
- Brush the ribs with marinade and place in a baking dish. Put in oven preheated to 180 C, and bake for 30 min.
- Remove the pan from the oven and cover with foil for 10 minutes. Slice the ribs into portions and serve.
