Ingredients
- ½ lb boneless pork sirloin roast or loin roast
- 1 cup shredded carrots (2 medium)
- 1 cup coarsely chopped red sweet pepper
- 1 medium onion, cut into thin wedges
- 2 Tbsp quick-cooking tapioca, crushed
- ¾ cup barbecue sauce
- 10 whole wheat hamburger buns, split and toasted
How to Make It
- Trim fat from meat. In a 3-½- or 4-quart slow cooker combine carrots, sweet pepper, and onion. Sprinkle with tapioca. Place meat on top of veggies. Pour barbecue sauce over meat.
- Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-½ hours.
- Remove meat from cooker. Thinly slice meat. Return sliced meat to sauce in cooker; stir to moisten. Serve meat mixture on hamburger buns.
