The sourness of this pork curry depends on mango used, Serve with plain rice, a vegetable dish and salad.
Ingredients
- 1 lb (50 g) pork loin, cubed
- 1 tables-noon fish sauce
- 2 tablespoons oil
- 3 tablespoons minced onion
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 3 dried red chilies, soaked and ground
- 1½ tablespoons peeled and shredded young (unripe) mango
- 1 teaspoon salt
- 1¼ cups (310 ml) water
How to Make It
- Marinate the pork in the fish sauce for 10 minutes. Heat the oil in a pan and stir-fry the onion and garlic for 5 minutes till fragrant.
- Add the ginger and chili and continue to fry for 2 minutes. Stir in the pork, mango and salt and mix well. Cover and cook over low heat for 20 minutes, stirring occasionally. Add the water and simmer over low heat for 20–25 minutes.
