A crispy plantain snack popular across all Africa. The name “Igbekere” comes from the Yoruba tribe in Nigeria. Traditionally made using green plantain, but other variations using ripe plantain have become popular.
Ingredients
- 2 unripe (green) plantains
- Salt
- Vegetable oil
How to Make It
- Peel plantains and slice into very thin slices or use a food processor to slice into very thin round slices (using a food processor or the slice slide of a grater will produce more even and thin crisps).
- Sprinkle salt on plantain slices and mix together in a bowl.
- Add vegetable oil to frying pan and place pan on medium heat.
- When the oil is hot, add plantain slices to oil, a few at a time.
- Fry for approx. 3 - 5 mins until crispy.
- Remove plantain from oil and place in a bowl lined with a kitchen towel
- Serve as a light snack.
