Ingredients
- 8 chicken drumsticks (about 3 lb.), skinned
- 8 oz can pineapple slices (juice pack)
- 1 cup red lentils, rinsed and drained
- 1 cup unsalted chicken stock
- ½ cup chopped onion
- 2 cloves garlic, minced
- 1 fresh jalapeño pepper, thinly sliced crosswise
- 1 tsp Chinese five-spice powder
- 1 tsp ground cumin
- ½ tsp salt
- ¼ tsp ground ginger
How to Make It
- Coat an extra-large nonstick skillet with cooking spray; heat over medium-high heat. Add chicken and cook for 10 minutes or until browned, turning once.
- Drain pineapple slices, reserving the juice. Halve pineapple slices and chill until serving time. In a 4- to 5-quart slow cooker combine reserved pineapple juice, lentils, stock, onion, garlic, jalapeño, five-spice powder, cumin, salt, and ginger.
- Place chicken drumsticks on top of lentil mixture. Cover and cook on low-heat setting for 3-½ to 4 hours. Serve chicken with reserved pineapple.
