Ingredients
- 400 g Penne durum wheat
- 1 kg broccoli
- 5-6 large shiitake
- 1 small bulb of shallot
- 1 clove of garlic
- 1 sprig of thyme
- olive oil
- salt, freshly ground black pepper
How to Make It
- Peel and finely slice the shallots. Garlic, slightly crush, peel and leave whole. Have shiitake mushrooms, remove tough stems, caps thinly slice.
- Broccoli remove the hard bottom stem. Head disassemble into florets and blanch in weakly boiling salted water, 5 min. part of the leave, the rest whisk blender, adding salt, pepper and olive oil.
- Bring to a boil Penne in a large number of generously salted boiling water. At the same time in a deep frying pan with a thick bottom olive oil saute the garlic, sprig of thyme, the shallots and shiitake, 3 min. Add broccoli puree,stir, warm. If sauce is very thick, add water from the boiling pasta.
- Penne pasta is ready drain in a colander, shake off excess water, mix the pasta with the sauce in the pan. Season with olive oil, arrange on a plate, decorate with remaining inflorescences broccoli and serve immediately.
