Ingredients
- 2 tablespoons Dijon mustard
- ½ teaspoon salt (optional)
- 1/8 teaspoon cayenne pepper
- 4 (4-ounce) boneless, skinless chicken breast cutlets
- ½ cup reduced-fat grated Parmesan cheese
- ½ cup panko bread crumbs
- 1 tablespoon chopped parsley
- 1 teaspoon garlic powder
- Cooking spray
How to Make It
- Preheat oven to 425°F. Lightly coat a baking sheet with cooking spray.
- In a large bowl, mix mustard, salt, if desired, and cayenne pepper. Add chicken and turn to coat completely; set aside.
- In a resealable plastic bag, combine Parmesan cheese, bread crumbs, parsley, and garlic powder. Transfer chicken to bag and shake to coat completely, pressing mixture onto chicken.
- Place chicken on prepared baking sheet and lightly coat with cooking spray.
- Bake 15 to 20 minutes, or until cooked through. Serve immediately.
