Ingredients
For the Salad
- 150 g day-old ciabatta bread
- 1 tbsp olive oil
- 500 g assorted tomatoes (eg beef, different coloured tomatoes, cherry tomatoes)
- 50 g Kalamata olives
- 1 tsp capers
- ½ red onion
For the Dressing
- 3 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 1 tsp capers
- 1 clove garlic
- ½ tsp salt
Extras
- ½ bunch basil
How to Make It
- Cut the bread into 2-cm-thick slices, coat them with the olive oil and grill them over direct heat for 2–3 minutes each side.
- Cut the tomatoes into large dice. Pit the olives and coarsely chop together with the capers. Cut the onion into fine strips. Cut or tear the bread into bite-sized pieces and add to the other salad ingredients.
- Combine the ingredients for the dressing in a blender and purée them.
- Pour the dressing over the salad and mix well.
- Top with basil leaves.
