    Paleo Deep-Fried Mushrooms Recipe

    Ingredients

    • 1 cup coconut oil or duck fat, for frying
    • 16 thin slices prosciutto
    • 32 whole small button mushrooms (about 1 pound)
    • Dairy-Free Ranch Dressing, for dipping
    How to Make It
    1. Heat the oil to 350°F in a deep fryer or in a 4-inch-deep skillet (or deeper)  over medium-high heat. The oil should be at least 1½ inches deep; add more oil if needed.
    2. While the oil is heating up, prepare the mushrooms
    3. Lay a slice of prosciutto on a clean work surface. Slice it in half lengthwise. Place a mushroom in the middle of the half prosciutto slice and wrap the prosciutto tightly around the mushroom. Prosciutto is sticky, so it will stay in place. Repeat until all the mushrooms are wrapped.
    4. Working in batches, fry the wrapped mushrooms by placing them in the hot oil for about 2 minutes, or until crisp on the outside. Remove from the oil and serve with the dressing.
