While not common in North America, eating rabbit is very common in many Italian families. Rabbit is a delicious meat that can be prepared in many different ways: baked, grilled, or cooked in a stew or casserole. Rabbit meat is similar to chicken, but can have a richer gamey taste.
Ingredients
- 1 rabbit, fresh, or frozen and thawed, cut into 6 pieces
- 1 cup white wine
- 3 garlic cloves, crushed
- 1/8 cup unsalted butter
- 3 tablespoons extra-virgin olive oil
- 1 teaspoon dried rosemary
- salt and pepper to taste
How to Make It
- Preheat oven to 325 degrees F.
- Generously season the meat with salt, pepper, and rosemary.
- In an oven-safe pan, melt the butter and heat the oil on medium-heat. Add the garlic and cook for one minute. Increase the heat to medium-high and sear both sides of the meat, about three minutes per side. Deglaze the pot with wine, cover, and transfer to the oven.
- Roast for 40 minutes. Remove from heat.
