I enjoy this marmalade on slices of my keto bread that I’ve fried in coconut oil to give the bread a nice crusty and golden exterior. (You can find my recipe for keto bread on my site, MariaMindBodyHealth.com search for “keto bread” or in my previous cookbook, The Ketogenic Cookbook.) You can also use this recipe to make other fruit-flavored marmalades. Simply swap out the orange tea bag with another fruit-flavored tea of your choice and use a corresponding fruit-flavored extract.
Ingredients
- 1 orange tea bag
- 2 teaspoons grass-fed powdered gelatin
- 0.33 cup Swerve confectioners’-style sweetener or equivalent amount of liquid or powdered sweetener
- 2 teaspoons orange extract
- 0.12 teaspoon citric acid (for natural preservation and sour taste)
- 1 teaspoon Stur orange-mango-flavored liquid water enhancer (optional, for color and taste)
How to Make It
- Bring 1 cup of water to a boil in a tea kettle. Place the tea bag in a cup and pour the hot water into the cup. Let steep for a few minutes, then remove the tea bag.
- Place 2 tablespoons of cool water in a bowl. Sift the gelatin over the water and allow it to soften for a few minutes. Add the brewed tea to the softened gelatin.
- Add the sweetener (adding more or less to desired sweetness) and stir to combine.
- Add the extract, citric acid, and Stur, if using, and stir to combine. Let sit on the counter to cool for at least 2 hours before using. Store in the fridge for up to 5 days.
