This is a delicious pasta dish you can make whenever you are craving homemade Italian food. It is so easy to make, it can be prepared in under 15 minutes.
Ingredients
- 8 ounces of spaghetti
- 2¼ cups of vegetable broth
- 2 leeks, chopped
- 1 cup of chickpeas, drained
- 1½ lemons, juice only
- 2½ Tablespoons of nutritional yeast
- ½ Tablespoons of powdered garlic
- ½ Tablespoons of powdered onion
- 1 teaspoon of Dijon mustard
- ½ cup of peas, frozen
- 1 handful of spinach
How to Make It
- In a pot set over medium to high heat, add in the spaghetti, vegetable broth, chopped leeks, chickpeas, lemon juice, nutritional yeast, powdered garlic, powdered onion and Dijon mustard. Stir well to mix.
- Lower the heat to medium. Cook for 10 minutes or until the spaghetti is soft.
- Add in the peas. Continue to cook for 3 to 5 minutes or until soft.
- Remove from heat. Serve immediately.
