This time, we have a burger with nacho and salsa goodness. Prepare these patties the night before if you like.
Ingredients
Burger
- 1 Can Black Beans (15 oz), Rinsed
- ½ cup Blue Corn Tortilla Chips, Finely Crushed
- ⅔ cup Salsa (Keep ⅓ aside for serving time)
- ½ cup Grated Cheddar
- 1 Large Egg, Lightly Beaten with a Fork
- 1 Scallion, Finely Sliced (White and green parts)
- ¼ Tsp Freshly Ground Black Pepper
To Serve
- 4 Round Rolls
- A Splash or Two of Oil (2 Tsp if you really want to measure it)
- 4 Lettuce Leaves
How to Make It

Make the Patties
- Mash or pulse the beans in a food processor until chunky, don’t worry if a few are whole still. Mix in the crushed chips, salsa, cheese, egg, chopped scallion and black pepper.
- Leave the mixture to rest for 10 minutes and then shape into 4 patties. Place patties on a plate, cover with plastic wrap and refrigerate at least 30 minutes or overnight. To Cook
- When you are ready to cook, heat the oven to 350°F to warm the buns for 5 minutes.
- Meanwhile, heat your pan with 1 Tsp oil over medium heat. Pop the patties in the pan and cook until golden brown on one side (5 min).
- Add the remaining oil and flip them over to cook for yet another 5 min. To Serve
- If you want to, you can serve them on buns. Otherwise, just serve them with salsa and lettuce.
