My boys enjoy these roll-ups so much that I often make a large batch to keep in the fridge. In fact, they’ll grab a whole roll-up, saving me the task of cutting them into bite-sized pieces.
Ingredients
- 1 pound thinly sliced pastrami
- 8 ounces chive cream cheese (or Dairy-Free Minute “Cream Cheese” Spread, for dairy-free)
- 8 dill pickles, store-bought or homemade
How to Make It
- Lay a slice of pastrami on a clean work surface with the shorter end facing you. Evenly spread 2 tablespoons of the cream cheese over the pastrami. Place a pickle at the closest end to you, then roll the pastrami around the pickle. Slice crosswise into eight pieces, secure the pastrami ends with toothpicks, and place the mini roll-ups on a serving platter. Repeat with the remaining ingredients. (Note: To save time, leave the roll-ups whole, to make eight roll-ups total.)
- Store in an airtight container in the refrigerator for up to 4 days. Do not freeze.
