Almost too good to be good for you! You don’t need much maple syrup, but you should definitely use the real thing.
Ingredients
- 3 large sweet potatoes
- 2 tbspĀ olive oil
- 2 tbspĀ pure maple syrup
- Salt and freshly ground black pepper to taste
- fresh parsley for garnish (optional)
How to Make It
- Preheat oven to 350 degrees.
- Peel sweet potatoes and cut into 1-inch cubes.
- In a mixing bowl, toss the sweet potatoes with oil and maple syrup.
- Season with salt and pepper.
- Transfer to a shallow baking dish and roast for 45 minutes or until tender when pierced with fork. About halfway through, turn with a spatula so potatoes brown evenly. Sprinkle with parsley if desired.
