Ingredients
- ¼ cup (60 ml) olive oil
- 2 tbsp Dijon mustard
- 2 tbsp balsamic vinegar
- 1 tbsp mayonnaise
- 1 tbsp maple syrup
- 3 cloves garlic, minced
- 1 cup (250 ml) chopped walnuts
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh parsley
- 1 sprig fresh rosemary
- Seasoning to taste
- 4 salmon filets (each 4 oz/120 g)
- ¼ cup (60 ml) fresh cilantro, for garnish
How to Make It
- Position rack in center of oven and preheat to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, combine all ingredients except for the salmon and cilantro for garnish. On prepared baking sheet, place salmon filets and brush with olive oil mixture. Cook in center of preheated oven for about 10 minutes, depending on thickness.
- Garnish with cilantro prior to serving.
- Serve with vegetables.
