Ingredients
For the vinaigrette
- 0.66 cup (160 ml) olive oil
- ½ cup (125 ml) lemon juice
- ¼ cup (60 ml) grapefruit juice
- 3 cloves garlic, minced
- 1 green onion, finely sliced
- ½ cup (125 ml) sliced pitted black olives
- ¼ cup (60 ml) chopped fresh mint leaves
- Seasoning to taste
How to Make It
- In a large bowl, mix all ingredients for salad.
- In a smaller bowl, whisk together ingredients for vinaigrette.
- Pour vinaigrette over salad and toss to coat.
