Ingredients
- 2 chicken breasts, about 4 ounces each, pounded thin
- 1 egg, beaten
- ¼ cup kale leaves
- ½ cup mascarpone cheese
- 0.33 cup parmesan cheese, grated
- ½ cup marinara sauce
How to Make It
- Preheat oven to 375°F.
- Place the egg, kale and mascarpone in a large bowl, and season with salt and pepper. Mix well to combine.
- Arrange the chicken breasts on a large baking sheet coated with non-stick cooking spray.
- Divide the cheese mixture into 2 portions and place each of them over the chicken breasts. Gently roll up. Make sure they are seam side down.
- Spoon the marinara sauce over the chicken rolls and sprinkle with grated parmesan.
- Bake in the oven for about 40 minutes until the cheese is melted.
