Ingredients
- ½ cups cooked brown rice
- ½ cups refrigerated unsweetened coconut milk beverage
- 0.33 cup packed brown sugar
- 0.66 cup snipped dried cherries
- 2 Tbsp butter, melted
- ¼ tsp ground cardamom
- 3 oz white chocolate, finely chopped
- ½ tsp vanilla
How to Make It
- Lightly coat the inside of a 3-½- or 4-quart slow cooker with cooking spray.
- In a large bowl combine cooked rice, coconut milk beverage, and brown sugar. Stir in dried cherries, butter, and cardamom. Transfer mixture to the prepared cooker.
- Cover and cook on low-heat setting for 2 hours. Add the white chocolate and vanilla. Stir gently until chocolate is melted and combined. Rice pudding will thicken as it cools. If desired, serve sprinkled with additional cardamom.
