Ingredients
- ½ lb lean ground pork
- 1 large onion, chopped (1 cup)
- 15 oz cans Great Northern beans, rinsed and drained
- ½ cups green salsa
- 1 cup reduced-sodium chicken broth
- ¾ cup water
- ½ tsp ground cumin
- 2 Tbsp snipped fresh cilantro
- ¼ cup light sour cream (optional)
- Fresh cilantro sprigs (optional)
How to Make It
- In a large skillet cook pork and onion over medium heat until meat is browned and onion is tender. Drain off fat. Transfer meat mixture to a 3-½- to 4-½-quart slow cooker. Stir in beans, salsa, broth, the water, and cumin.
- Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3-½ to 4 hours. Stir in snipped cilantro. If desired, top each serving with sour cream and cilantro sprigs.
