Ingredients
- 1 pint cherry tomatoes
- 2 tablespoons MCT oil
- Fine sea salt and fresh ground black pepper
- 6 (½-inch-thick) slices Keto Bread
- 3 tablespoons unsalted butter, softened, or MCT oil
- ½ pound brie, sliced thin
How to Make It
- Place the oven rack in the top position, about 4 inches below the broiler. Preheat the broiler to high. Line a rimmed baking sheet with parchment paper.
- Put the cherry tomatoes on the prepared baking sheet, drizzle them with the MCT oil, and season them with salt and pepper. Broil them until they burst, about 5 minutes (check often). Remove from the oven and set aside.
- Grease the bread on both sides with the butter and top each slice with several slices of brie. Place the prepared bread on a rimmed baking sheet and place on the middle rack in the oven to broil for about 2 minutes, until the cheese is bubbling and slightly browned.
- Remove from the oven and top with the burst tomatoes. Serve immediately.
