    How to Make Toasted Open-Face Brie and Tomato Sandwich

    Ketogenic Cookbook - Nutritious Low-Carb

    • Yield: 6 open-face sandwiches (1 per serving)

    Ingredients

    • 1 pint cherry tomatoes
    • 2 tablespoons MCT oil
    • Fine sea salt and fresh ground black pepper
    • 6 (½-inch-thick) slices Keto Bread
    • 3 tablespoons unsalted butter, softened, or MCT oil
    • ½ pound brie, sliced thin
    How to Make It
    1. Place the oven rack in the top position, about 4 inches below the broiler. Preheat the broiler to high. Line a rimmed baking sheet with parchment paper.
    2. Put the cherry tomatoes on the prepared baking sheet, drizzle them with the MCT oil, and season them with salt and pepper. Broil them until they burst, about 5 minutes (check often). Remove from the oven and set aside.
    3. Grease the bread on both sides with the butter and top each slice with several slices of brie. Place the prepared bread on a rimmed baking sheet and place on the middle rack in the oven to broil for about 2 minutes, until the cheese is bubbling and slightly browned.
    4. Remove from the oven and top with the burst tomatoes. Serve immediately.
