Ingredients
- 2 mackerel fillets, about 4 ounces each
- 1 green onion, chopped
- 1 (14 ounce) can chopped tomatoes
- 1 teaspoon light brown sugar (leave this out if you want)
- Small bunch of thyme leaves, chopped
- Fresh cilantro to serve

- 1 tablespoon canola oil
- Salt and pepper to taste
How to Make It
- Add the oil to a large skillet and set over medium heat.
- Add the onion and sauté for 4-5 minutes.
- Add the salt, pepper and thyme leaves, stir and add the tomatoes.
- When the mixture begins to boil, reduce the heat to low and let it simmer for about 5 minutes.
- Add the mackerel fillets to the sauce, cover and simmer for about 10 minutes, until the fish is cooked through.
- Top with cilantro and serve alongside sautéed or steamed vegetables.
