    How to Make Thyme Mackerel with Tomato Sauce

    6 Ingredient Ketogenic Cookbook

    Ingredients

    • 2 mackerel fillets, about 4 ounces each
    • 1 green onion, chopped
    • 1 (14 ounce) can chopped tomatoes
    • 1 teaspoon light brown sugar (leave this out if you want)
    • Small bunch of thyme leaves, chopped
    • Fresh cilantro to serve
    Essentials
    • 1 tablespoon canola oil
    • Salt and pepper to taste
    How to Make It
    1. Add the oil to a large skillet and set over medium heat.
    2. Add the onion and sauté for 4-5 minutes.
    3. Add the salt, pepper and thyme leaves, stir and add the tomatoes.
    4. When the mixture begins to boil, reduce the heat to low and let it simmer for about 5 minutes.
    5. Add the mackerel fillets to the sauce, cover and simmer for about 10 minutes, until the fish is cooked through.
    6. Top with cilantro and serve alongside sautéed or steamed vegetables.
