For very special occasions, I like to serve this spectacular swirl of strawberries, angel food cake, and cream (three varieties, no less!). It’s not exactly for dieters, but I’ve managed, as usual, to lower the calorie count without sacrificing a morsel of flavor.
Ingredients
- 16 ounces light cream cheese (2 packages at room temperature)
- 10 cups powdered sugar
- 1 cup light sour cream
- 3 tsp vanilla extract, divided
- ¼ tsp almond extract
- 1 cup heavy cream
- 9 inch angel food cake, cut into 1½ inch cubes
- 2 quarts fresh strawberries, washed and thickly sliced
- 4 tbsp sugar
- Whole strawberries for garnish
How to Make It
- Using an electric mixer and a large bowl, combine cream cheese and powdered sugar. Blend in the sour cream, 2 teaspoons of the vanilla extract, and the almond extract.
- In a small bowl, whip the heavy cream and the remaining 1 teaspoon of vanilla until stiff. Fold into the cream cheese mixture. Fold in the angel food cake and mix well to coat cubes.
- In a separate bowl, combine the sliced strawberries and sugar to taste.
- In the bottom of a large glass (trifle) bowl, arrange about one-third of the sliced strawberries. Cover with one-half of the cream cheese/cake mixture. Repeat these two layers, then top with the remaining strawberries.
- Cover the bowl with plastic wrap and chill well before serving.
- Garnish, if desired, with whole strawberries.
