Ingredients
- 4 cups (1 liter) baby spinach
- 1 can (19 oz/540 ml) chickpeas, drained and rinsed
- 1 cup (250 ml) red grapes, halved
- ½ cup (125 ml) whole pitted black olives
- ½ cup (125 ml) crumbled light feta cheese
- 1 cucumber, peeled and sliced
- 3 green onions, thinly sliced
For the vinaigrette
How to Make It
- In a salad bowl, mix all ingredients for salad.
- In a smaller bowl, whisk together ingredients for vinaigrette.
- Drizzle vinaigrette on salad before serving and toss to coat.
