How to Make It
- In a skillet, heat oil over medium-low heat and sauté onion and garlic for about 3 minutes.
- Add eggs and chives. Stir and continue cooking for about 3 minutes.
- Lay kale over omelet and fold omelet in half. Continue cooking for 1 minute.
- Top with smoked salmon and capers, if using.
