Ingredients
- 4 slices bacon, chopped
- 1 pound large shrimp, peeled and deveined
- 1 small head cabbage, sliced into noodlelike strips, or 2 (7-ounce) packages Miracle Noodles, rinsed and drained
- ½ cup MCT oil
- ¼ cup diced yellow onion
- 6 cloves garlic, chopped
- ½ cup fish or chicken bone broth
- 3 tablespoons chopped fresh flat-leaf parsley
- 1 cup diced yellow tomato
- ½ lemon juice
- ½ teaspoon fine sea salt
- Fresh ground black pepper to taste
- Chopped fresh flat-leaf parsley, for garnish (optional)
- Red pepper flakes, for garnish (optional)
- Several slices Keto Bread, fried in bacon fat, for serving (optional)
How to Make It
- Fry the bacon in a very large sauté pan over medium-high heat until crisp, then remove the bacon from the pan, leaving the drippings. Pat the shrimp dry and sauté them in the bacon fat. Cook the shrimp until they are opaque and pink, about 6 minutes, flipping halfway through cooking. Remove from the pan and set aside with the bacon crumbles.
- To the sauté pan, add the cabbage strips, MCT oil, onion, garlic, broth, parsley, tomato, lemon juice, salt, and pepper. Sauté over medium heat until tender, about 15 minutes. (If using Miracle Noodles, place in the pan after about 10 minutes, when the onion and tomato are fully softened. Gently warm the noodles through over low heat, about 1 minute.)
- Add the shrimp and bacon crumbles to the pan and toss everything to coat. Garnish with fresh parsley and/or red pepper flakes and serve with fried keto bread to sop up the tasty sauce, if desired.
