Ingredients
- 4 cooking apples, cored and halved
- ½ lb boneless pork shoulder roast
- ¼ tsp salt
- ¼ tsp black pepper
- ½ cup mango nectar
- 1 recipe Fruit Relish
- Lime wedges
How to Make It
- Place apples in a 4- to 5-quart slow cooker. Trim fat from roast; season roast with salt and black pepper. Place pork shoulder on top of apples. Pour mango nectar over roast in cooker.
- Cover and cook on low-heat setting for 10 to 12 hours.
- Remove meat from cooker; discard apples and cooking liquid. Using two forks, shred meat. Serve pork with Fruit Relish and lime wedges.
